‘Tis the season to sleep, bake, eat and repeat.
Early on in the quarantine, I saw a video Joanna Gaines posted of her chocolate chip cookies and tried them out. They were delicious. I told my family they had to try and the general consensus was – Best. Cookies. Ever.
We baked them at least once a week at the Rodríguez household. One of the times, we didn’t have any eggs and substituted it with apple sauce and there was born the chewy, cake-like chocolate chip cookies we cannot stop making. Hope you enjoy!
Ingredients
- 1 ½ cup of flour
- 1 cup of brown sugar (can be dark or light brown)
- 1 tsp of baking soda (or 3 tsp of baking powder)
- ½ stick of unsalted butter
- 4 oz. of unsweetened apple sauce
- Sprinkle of salt
- Dash of cinnamon
- Chocolate chips
Preparation
Pre-heat oven to 350º degrees and prepare baking sheets with parchment paper.
In a large bowl combine flour, baking soda and salt. Mix and set aside.
In another bowl, combine sugar and butter (make sure it is room temperature so that it can blend easily) and mix until it is has a creamy finish.
Pour in the apple sauce and mix. Once well blended, slowly add the combination of flour, baking soda and salt.
Toss in chocolate chips to taste.
Create small little balls of batter and place on baking sheets and bake for 13 minutes.
Let sit for 5 minutes after taking out of the oven and enjoy!
