My oh-so creative sister decided to take a trip to Disney World and recreated the caramel popcorn recipe from EPCOT’s Germany – aka the most DELICIOUS popcorn in the world. And let me tell you, Christy did not disappoint. Being the generous person she is, she shared with me the recipe so that everyone can enjoy a little Disney treat during this quarantine.
- 1 cup of popcorn kernels
- 2 tablespoons of coconut oil
- 2 cups of brown sugar
- 1 cup of butter
- ½ cup of light corn syrup
- ¼ teaspoon of salt
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
Heat oven to 250º Fahrenheit.
In a deep pot, melt the coconut oil over low heat. Once melted, add the popcorn kernels and cover with lid. Wait 5 to 10 minutes – you will know it’s done once you hear 10 seconds between pops.
In a skillet, add the butter. Once it is melted, toss in the brown sugar, corn syrup and salt. Stir continuously until it begins to bubble. Once boiling, let it boil for 4 minutes without stirring. Take off heat, add vanilla and baking soda and mix.
Add popcorn into a large bowl and pour caramel over. Mix until everything is well coated. Lightly spray a large baking pan with non-stick oil and pour popcorn over. Make sure it’s evenly spread out. Place popcorn in the oven for 45 minutes taking it out to mix every 15 minutes.
